RECIPE FOR 12 CUPCAKES:


  • Fruit Goo / Jam: 300g bag of frozen blueberries (or fresh - which is what I used) 1/2 cup of caster sugar

  • Cream Cheese Icing: 75g softened unsalted butter 120g cream cheese 420g icing sugar (sifted)

  • Cakes:
    125g gluten free self raising flour 125g caster sugar 1/8 tsp xantham gum 1/4 tsp bicarbonate of soda (baking soda) 125g soft unsalted butter 2 large free-range eggs 1 & 1/2 tbsp whole milk Jam

HOW TO:

To make the fruit jam, simply mix both the blueberries (frozen or fresh) and the sugar in a pan at low heat and let it simmer until it starts to bubble at the edges. Mix it occasionally and use a potato masher to help break down the fruit fully. At the end, when you see the mixture has reached a jammy consistency, remove from the hob. If you think it's a little lumpy (perhaps because of the skin which may not have dissolved properly), I'd recommend passing it through the sieve. Let it cool and move to the cupcakes. 




For the cake, simply add all the ingredients to the mixer or a mixing bowl (leaving only the milk out) and blend everything together for about 1-2 minutes. Once the whole mixture is uniform and well blended, reduce the speed and add the milk, beating it faster once again for another 30 secs.


Add a tbsp or 2 to the batter, moving it slowly to create a ripple throughout the whole mixture. Scoop it onto the cupcake cases and bake at 170C for 22 mins.

   

While the cupcakes are in the oven, start preparing your cream cheese icing. Whip the butter and the cream cheese together until nicely combined then add the sugar in two stages to make sure it's all mixed really well. 

To decorate the cupcake, spread some of the icing at the top of the cake then drop a dollop of the jam on it and using a toothpick or anything similar, start moving the jam around to create a lovely swirl, similar to what you did to the cake batter & as seen on the main picture. Et voilá! 


This is sincerely the best gluten free recipe I have ever tried. Easy to make, tasty and fluffy... it'll leave you wanting more.
